Yellow chives are Chinese green chives that are grown in the dark without any light, which prevents photosynthesis and the production of chlorophyll.
Yellow chives have a fuller texture than green chives and are very umami. They are often used in dumplings, springs, and stir-fried dishes with meat and eggs.
YELLOW CHIVE AND EGG STIR-FRY
Ingredients
1/2 lb yellow chives
3 large eggs
Ground white pepper
Vegetable oil
Shaoxing cooking wine or rice wine, optional
Salt
Instructions
Wash and dry the yellow chives. Cut them into 1 1/2-inch pieces. Beat three large eggs.
2. Heat 2 Tbsp of vegetable oil in a wok. When the oil starts to smoke, add the chives. Stir-fry chives on high heat for 30 seconds to 1 minute. Remove the chives and set them aside. Don't over cook them.
3. Add 2 tsp of oil to the same wok. When the oil is hot again add the egg wash. Fry the eggs over medium heat until the bottom side is set.
4. Add the chives to to the eggs. So the running eggs can coat the chives. Sprinkle 3/4 tsp of salt, 1/3 tsp of white pepper and add 2 tsp of cooking wine.
5. Flit the eggs. Let it set for 15 seconds. Break the eggs into bite-size pieces with a spatula.
6. Plate and enjoy as it is or serve it as a side dish with rice.
