1. MALA DRESSING
Ingredients - 2 Servings

1 Tbsp light soy sauce/seasoning soy sauce
1 tsp oyster or hoisin sauce
1 tsp dark vinegar
½ tsp sesame seeds or sesame oil
2 garlic cloves, minced
1 Tbsp chopped scallions
1 tsp chili flakes
½ tsp Sichuan peppercorn powder (or Sichuan peppercorn oil. You can grind whole peppercorns and make pepper powder)
2 Tbsp vegetable oil (canola, peanut, or corn)
Instructions
Add garlic, scallions, chili flakes, Sichuan peppercorn powder, and sesame seeds or sesame oil to a heat-resistant bowl.
Heat 2 Tbsp vegetable oil in a saucepan. When the oil is smoking hot, pour oil onto aromatics and spices to bring out more flavors.
Add oyster or hoisin sauce, soy sauce, and dark vinegar and stir well.
This dressing is all-purpose, perfect for meat, seafood, vegetables, tofu, noodles, and dumplings.
2. GINGER AND SCALLION DRESSING Ingredients - 2 Servings
1 Tbsp ginger puree or grated
2 scallions, finely chopped
2 Tbsp stock or water
¾ to 1 tsp salt to taste
1/4 tsp sugar
2 Tbsp vegetable oil (canola, peanut, or corn)
Instruction
Add pureed ginger and chopped scallion to a heat-resistant bowl.
Heat 2 tbsp vegetable oil in a saucepan. When the oil is smoking hot, pour oil onto the ginger and scallions to bring out more flavor.
Add salt, sugar, and stock, then stir well. Add more salt and sugar to taste.
This dressing is perfect for chicken, seafood, vegetables, and noodles.
3. SHACHA DRESSING
Ingredients - 2 Servings
1 Tbsp Shacha sauce (See an below. Shacha sauce is a signature condiment in regions like Fujian and Taiwan. The main ingredients are oil, chili, garlic, ginger, shallots, dried shrimp, and fish)
1 Tbsp peanut butter (smooth or crunchy)
1/2 tsp cane sugar or brown sugar
1/3 tsp salt
1/2 tsp soy sauce
3 Tbsp regular milk or plant-based milk
Instructions
Mix all ingredients. Make this upon serving.
