Stir-Fried Bean Sprouts

Bean sprouts stir-fried for the Chinese New Year dinner are called ruyi cai. Ruyi 如意 is a traditional Chinese decorative object meaning "as one wishes." Ruyi cai (bean sprouts), symbolizing power and good fortune, is often served during Chinese New Year.


Ingredients

  • 8 oz of mung bean or soybean sprouts

  • 2 Tbsp of pickled mustard or cabbage

  • 1 Tbsp of finely chopped garlic

  • Light soy sauce

  • Vegetable oil (Corn, canola, peanut, and soybean)

  • Salt

Instructions

  1. Heat 3 Tbsp of vegetable oil in a wok or a large pan over high heat. Add 1 Tbsp of chopped garlic and 2 Tbsp of pickled mustard. Stir-fry until you can smell the fragrance.


2. Add bean sprouts to the wok. Stir-fry on high heat until slightly wilted.


3. Add 1 1/2 Tbsp of soy sauce and 1/2 tsp of salt. Toss well and stir for another minute. Cook for a little longer if you like soft bean sprouts.


4. Enjoy as a side dish.
