Refreshing and Savory Salad Dressings

Discover three delicious summer dressings that complement vegetables, mushrooms, chicken, noodles, and more.



1. REFRESHING DRESSING

Ingredients - 2 Servings

  • 1 ½ Tbsp vegetable oil (corn, canola, peanut)

  • 2 cloves of garlic, crushed or minced

  • 1 scallion, finely chopped

  • 1 ½ Tbsp white vinegar

  • 1 tsp sesame oil

  • Sugar

  • Salt

Instructions

  1. Heat vegetable oil in a small saucepan over medium-low heat.

  2. Add minced garlic and chopped scallions to the oil. Simmer for a few minutes until you can smell the aroma and ⅓ of the aromatics are golden.

  3. Turn off the heat and let the remaining heat cook the garlic and scallions for another few minutes.

  4. Add ⅓ tsp salt, ½ Tbsp sugar, 1 tsp sesame oil, and 1 ½ Tbsp white vinegar to a bowl. Pour the warm garlic and scallion-infused oil into the bowl. Mix well. More salt or sugar to taste.

This dressing is perfect for cucumber, radish, and chicken.


2. RICH SAVORY DRESSING

Ingredients - 2 Servings


Instructions

  1. Heat vegetable oil in a small saucepan over medium-low heat.

  2. Add minced garlic and chopped scallions to the oil. Simmer for a few minutes until you can smell the aroma and ⅓ of the aromatics are golden. Turn off the heat and the remaining heat cook the garlic and scallions for another few minutes.

  3. Add 1 Tbsp light soy sauce, 1 Tbsp soybean paste (or sweet bean paste), 1 tsp sesame oil, 1 ½ Tbsp white vinegar, and 1 Tbsp water to a bowl. Pour the warm garlic and scallion-infused oil into the bowl. Mix well.

This dressing is perfect for steamed eggplant, blanched mushrooms, and cooked noodles.


3. SWEET AND SAVORY DRESSING

Ingredients - 2 Servings

  • 1 ½ Tbsp vegetable oil (corn, canola, peanut)

  • 2 cloves of garlic, minced or thinly sliced

  • 1 scallion, finely chopped

  • 1 Tbsp light soy sauce

  • 1 Tbsp hoisin sauce

  • 1 tsp sesame oil

  • 1 Tbsp water

  • 1 Tbsp chopped scallions and cilantro for garnish (optional)

  • Add chili flakes or chili sauce for an extra kick (optional)

  1. Heat vegetable oil in a small saucepan over medium-low heat.

  2. Add minced garlic and chopped scallions to the oil. Simmer for a few minutes until you can smell the aroma and ⅓ of the aromatics are golden. Turn off the heat and the remaining heat cook the garlic and scallions for another few minutes.
