1. REFRESHING DRESSING
Ingredients - 2 Servings
1 ½ Tbsp vegetable oil (corn, canola, peanut)
2 cloves of garlic, crushed or minced
1 scallion, finely chopped
1 ½ Tbsp white vinegar
1 tsp sesame oil
Sugar
Salt
Instructions
Heat vegetable oil in a small saucepan over medium-low heat.
Add minced garlic and chopped scallions to the oil. Simmer for a few minutes until you can smell the aroma and ⅓ of the aromatics are golden.
Turn off the heat and let the remaining heat cook the garlic and scallions for another few minutes.
Add ⅓ tsp salt, ½ Tbsp sugar, 1 tsp sesame oil, and 1 ½ Tbsp white vinegar to a bowl. Pour the warm garlic and scallion-infused oil into the bowl. Mix well. More salt or sugar to taste.
This dressing is perfect for cucumber, radish, and chicken.
2. RICH SAVORY DRESSING
Ingredients - 2 Servings
1 ½ tbsp vegetable oil (corn, canola, peanut)
2 cloves of garlic, crushed or minced
1 scallion, finely chopped
1 Tbsp light soy sauce
1 Tbsp soybean paste (or sweet bean paste)
1 ½ Tbsp dark vinegar (Chinkiang vinegar)
1 tsp sesame oil
1 Tbsp water
1 Tbsp chopped scallions and cilantro for garnish (optional)
Instructions
Heat vegetable oil in a small saucepan over medium-low heat.

1 scallion, finely chopped
1 Tbsp light soy sauce
1 Tbsp hoisin sauce
1 tsp sesame oil
1 Tbsp water
1 Tbsp chopped scallions and cilantro for garnish (optional)
Add chili flakes or chili sauce for an extra kick (optional)
